Ingredients

  • 1 pound Lo Mein noodles or Spaghetti/Linguine
  • ½ cup Creamy Peanut Butter
  • ¼ cup Soy Sauce (low sodium preferred)
  • 2 tbsp Rice Vinegar
  • 1 tbsp Sesame Oil
  • 1 tbsp Maple Syrup or Honey (or to taste)
  • 1 tsp Fresh Ginger, grated
  • 2 cloves Garlic, minced
  • 1-2 tsp Sriracha or Chili Garlic Sauce (or more for extra heat)
  • ½ tsp Red Pepper Flakes (optional)
  • 2-4 tbsp Water (for thinning sauce, as needed)
  • 1 cup Carrots, shredded
  • 1 cup Cucumber, thinly sliced or julienned
  • ¼ cup Green Onions, sliced (for garnish)
  • 1 tbsp Toasted Sesame Seeds (for garnish)

Method

  1. Cook the Noodles: Bring a large pot of salted water to a rolling boil. Add your chosen noodles and cook according to package directions until al dente. This usually takes 5-8 minutes. Drain the noodles well and rinse them with cold water to prevent sticking. This also stops the cooking process. Set them aside.
  2. Prepare the Peanut Sauce: While the noodles cook, combine all the sauce ingredients in a medium bowl. This includes creamy peanut butter, soy sauce, rice vinegar, sesame oil, maple syrup (or honey), grated fresh ginger, minced garlic, Sriracha (or chili garlic sauce), and red pepper flakes (if using).
  3. Whisk the Sauce: Whisk everything together thoroughly until the sauce becomes smooth and creamy. If the sauce seems too thick, add water, one tablespoon at a time, until it reaches a pourable but still rich consistency. You want it to coat the noodles beautifully for these Spicy Peanut Noodles.
  4. Combine Noodles and Sauce: Place the drained noodles back into the large pot or a spacious serving bowl. Pour the prepared peanut sauce over the noodles.
  5. Add Vegetables: Toss in the shredded carrots and julienned cucumber. If you’re adding any other cooked vegetables or protein, now is the time.
  6. Toss Everything Together: Use tongs to thoroughly toss the noodles, sauce, and vegetables. Ensure every strand of noodle is evenly coated with the delicious, spicy peanut sauce. This step is crucial for perfect Spicy Peanut Noodles.
  7. Serve and Garnish: Divide the Spicy Peanut Noodles among serving bowls. Garnish generously with sliced green onions and toasted sesame seeds. Serve immediately and enjoy your homemade Spicy Peanut Noodles!

Notes

Don't Overcook Noodles: Al dente is key! Overcooked noodles become mushy and won't hold the sauce as well. Rinsing them with cold water after draining also prevents them from clumping together, ensuring a perfect texture.
Room Temperature Peanut Butter: If your peanut butter is very cold and stiff, briefly warm it in the microwave (about 15-20 seconds) before mixing the sauce. This makes it much easier to whisk into a smooth, creamy sauce.
Taste and Adjust the Sauce: Everyone’s palate is different. Taste the peanut sauce before tossing with noodles. Adjust for salt, sweetness, tang, or heat.
Grate Ginger and Garlic: Using freshly grated ginger and minced garlic adds a vibrant, fresh flavor. A microplane makes this task easy.
Prep Ahead: The peanut sauce can be made up to 3 days in advance. Cook noodles ahead, rinse with cold water and toss with a tiny bit of sesame oil to prevent sticking. If sauce thickens, thin with a little water.
Serve Immediately (Mostly): While excellent cold, they are truly divine warm. For meal prep, cold Spicy Peanut Noodles are also fantastic.
Extra Crunch: For added texture, toss in some chopped roasted peanuts or cashews with the garnish.
Storage: Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Flavors often deepen overnight.
Cold Serving: Fantastic served cold, straight from the fridge; great for packed lunches.
Reheating: Transfer to a microwave-safe bowl. Add 1-2 tbsp water or chicken broth to loosen sauce. Microwave on medium in 30-second intervals, stirring, until heated through. Alternatively, gently warm in a skillet over low heat with a splash of water, stirring frequently. Avoid overheating.
Sauce Consistency: If sauce is thick after refrigeration, a tiny drizzle of sesame oil or water can help loosen it when reheating.
