  • 1 fresh pineapple
  • 2 (6 ounce) cans pineapple juice
  • 1 cup brown sugar

Method
 

  1. Preheat your oven to 325°F (165°C).
  2. Choose a roasting pan large enough for your ham and place the ham cut-side down to keep it moist.
  3. Prepare the fresh pineapple: Trim the tough outer skin with a sharp knife, remove brown 'eyes', and slice the pineapple into ½-inch thick rings.
  4. Use a round cutter to remove the fibrous cores from the pineapple rings.
  5. Secure the pineapple rings to the ham with toothpicks for maximum flavor and presentation.
  6. Prepare the sweet and sticky pineapple glaze: In a microwave-safe bowl, combine pineapple juice and brown sugar. Heat until it boils and thickens slightly.
  7. Begin initial baking: Place the ham in the preheated oven and bake for 30 minutes without glaze.
  8. Apply the first glaze: Remove the ham from the oven and brush half of the prepared glaze evenly over the ham. Return to the oven and bake for another 30 minutes.
  9. Apply the remaining glaze: Remove the ham again and brush the rest of the glaze over it. Continue baking for an additional 30-60 minutes.
  10. Check for doneness: Use a meat thermometer to check the internal temperature in the thickest part of the ham. It should reach 140°F (60°C).
  11. For extra caramelization: Optionally, broil the ham for 2-3 minutes at the end, watching closely to prevent burning.
  12. Rest the ham: Remove the ham from the oven and let it rest for 10-15 minutes before slicing to ensure it stays juicy and flavorful.
